What kind eggplant? I like the chinese eggplant, they are thin and long. I stir fry them with ginger root. You put ginger root in the heated oil first.

Eggplant is great in casseroles or eggplant Parmesan. It's also good deep fried. Cut the eggplant into slices about 1/2 inch thick and peel the skin. To remove bitterness, salt the raw slices and let them stand for a few hours and the salt should remove the bitterness.

The skin of the eggplant tends to be bitter, so I peel it. I cut about half inch rounds, dip them in flour with salt and pepper in it, next into the beaten eggs wash, and finally bread crumbs. Fry in oil, very good meat substitute.

The easiest way to cook eggplant is by cutting it into quarter inch rounds. Burshing EVOO on either side, adding salt. And baking for 20 mins at 350.

Chop eggplant into chunks and stir fry it in some olive oil. Throw in some teriyaki or soy sauce and it will taste really great.

Wash eggplant. Do not peel. Slice thinly. Dip each slice in flour, then egg, then Italian bread crumbs. Fry quickly in olive oil on medium high heat.
