Consider how many eggs you want each person to have -- and multiply by 100. It's simple arithmetic. I like one egg per person, so I'd say 100.

I would think about 12 dozen. By the time you put all the other things in the salad it should stretch it out. I use onions, celery, red,yellow and orange peppers cut up small, diced cucumber seedless and mayo.

the number of eggs would depend on what else is being served with the eggs salad, with you have multiple supporting dishes then id say about 100 and if there are not many supporting dises that i would say 300, it would also vary depending of the time of day,
