How hot do you get the pressure cooker when cooking tomatoes?

To avoid any chance of botulism, a pressure cooker should be heated to 240 degrees minimum; however, tomatoes contain enough acid that they can be canned in boiling water.

When using a pressure cooker, you are not concerned with what temperature it should reach. By it's nature, the pressure cooker reaches a stable temperature (roughly the boiling point of water, but it changes slightly, depending on what's in it) and releases pressure in the form of steam to retain that temperature.

Many pressure cookers use the standard setting of 15 psi. It really depends on how many tomatoes you are using and whether or not they are fresh tomatoes or canned tomatoes. Many pressure cookers have only one setting. With the information that you have provided, I would use the standard setting of 15 psi.
