The age of poultry is very important to how and when to cook the bird.Also, the gender only plays a small role in this decision.Therefore, with that said let me explain.A young hen is used to fry or roast because it is the most tender. The old tough roosters are the birds best used for braising and cooking in soups.

The younger the chicken, the more tender it is. Just like in human beings, young adults have softer, smoother and firmer skin as compared to old people whose skin have become wrinkled and saggy. Females are usually more tender than males, probably because of increase in fat.
