How does carryover baking impact baked products?

Carryover baking is the effect of retained heat in the baked items continuing to cook the items even after they are removed from the heat. Carryover baking robs baked items of their moisture and tenderness and can even scorch them. Better to pull them out early than allow carryover baking.

Carryover baking can affect the products negatively because, when the directions say to cook for twenty five minutes, it doesn't take into account that the baked good will continue to cook after it has been removed from the oven. The food could over-cook.
