Mix 2oz butter and 4oz flour until the mixture looks like fine breadcrumbs. Add a pinch of salt and mix thoroughly. Gradually, add water (about 5 tablespoons) and mix with a knife until the mixture firms. With floured hands, knead the dough until flexible. Roll out on a floured surface to desired thickness. Use immediately or chill for use later.
