My favorite recipe! You'll like it! 3/4 c. sugar 1 c. butter 4 oz. cream cheese 1/2 tsp. salt 1 1/2 tsp. vanilla 1 egg yolk 2 1/4 c. flour Mix first 6 ingredients well. Add flour slowly while stirring. Chill 3 hours. Roll dough to 1/8 inch thickness, cut. Bake on ungreased sheets at 375 degrees for 7 mins.

An easy way to adapt a cookie recipe to contain cream cheese is to cut the amount of eggs used in the recipe and substitute softened cream cheese instead. This is okay to do since both cream cheese and eggs are used as viscous binders for baking recipes. I would, however; add some extra vanilla to counteract the sourness.

Use store brought or home made large cookies. Take ice cream and let it soften. Take 2 cookies lay then side by side. Take a scoop of ice cream and put in on 1 cookie, put the other cookie on top. Wrap with aluminum foil and place in freezer.

There are many excellent recipes available for cream cheese cookies, but if you have a favorite sugar cookie or butter cookie recipe, it is very easy to adapt. The only change that you have to make is to substitute half of the butter in the recipe with softened cream cheese.
