The herb is first harvested in an organic field. Once it reaches it's peak it is harvested; some areas pull the plants by hand; others' use machinery. Depending on the herb; it is typically the petal or leaves where the herb/oil come from. The plants are run thru a distillary; tested to be sure it is the correct grade.
