The best way to defrost a freezer and not lose the food that is in it is to get a few coolers, fill them with ice and put the food in them. This keep the food cold and be able to get the ice out of your freezer.

Most freezers these days defrost themselves automatically without you needing to do anything to them. If yours has a build-up of frost, then maybe you should call a service technician. If you're sure that yours isn't supposed to defrost on its own, then maybe you could borrow a neighbor's freezer while you do the job.
