You look at what you put on a plate, then you weigh it, is the easy answer. Portions of veg and potatoes average about 6oz per person, meat 6oz to 8oz. But if you cook for a crowd it is easiest to serve chilli and rice or similar, so you can prepare in advance, then warm things on the day.

First you have to get an estimate of the number of people. Select recipes which you can double up. Once you are done, keep dishes warm and safe.
