Does "automatic" mean a car with a stick shift?

If not, what is it called when you have to shift gears yourself?

An automatic car is a vehicle that shifts gears itself, all you have to do is put it into drive and the car does the rest. A car that has to be shifted by the driver is called a standard, or a manual. Manual cars are becoming less common, autmatics still have something like a stick shift but its not.

No, a "stick shift" transmission is a nickname for manual transmission. It gets its name from the gear selector (or stick) between the driver and passenger. A manual transmission requires that the driver change gears themselves, manually, by first depressing the clutch pedal then selecting the appropriate gear with the gear selector and subsequently releasing the clutch pedal.

An "automatic" car is one that shifts automatically. What you're looking for is called a manual or standard transmission where you have to manually move the stick shift to change the gears. An automatic does not have a clutch and does not require you to change gears. A manual, or standard, does have a clutch and requires you shift gears.
