Yes you can, a service manual will have the specific location. They are usually located on the radiator line measuring the temperature of the water out of the engine.

Yes you can replace the temperature gauge in most cars. If it is popular enough then you should be able to locate a oem style gauge to replace the original one. However if you want more precise reading you may want to consider upgrading to a quality aftermarket one. The cost little more but are a lot more accurate.
