Why is Jennie-O turkey so gritty?

Are bones ground up in it?

There aren't bones ground up in the meat. That would not get approved by the government. It could be the cooking technique you are using that is making it seem gritty. Turkey is more of a dry meat that can't stand overcooking. If you are having trouble telling if the meat is done, you could get a meat thermometer.

It is highly unlikely that there are bone chunks in the turkey; rather, this is an issue with ground turkey in general, because most consumers are used to the texture of ground beef, which has significantly higher fat content. The relatively low fat content in turkey makes it drier, which makes it seem "grittier.
