Why is it important to use the type of flour listed in a recipe?

It's important because their consistence change a lot. For example, if you try to make pasta with a flour that is not 00, you will see that, when cooked, it becomes viscid.

Because the flour can be made various way. It can be made with very grain or with big grain. It can be white or brown. It can be a mix of multiple flour. The way you bake it will change. So respect the flour!
