Why does Jello jiggle?

The jiggle in Jello comes from gelatin. Gelatin can not be firm enough to have some jiggle in it. What would Jello be without jiggle?

Gelatin is a collagen, protein taken from the bones and connective tissues of mammals. When it's reconstituted in water, some protein bonds remain unstable; therefore the jello doesn't solidify completely.
