Why are the bottoms of stainless steel pots and pans usually lined with another type of metal?

Like copper?

Copper is a heavier metal, and will prevent foods from sticking to the pan, making cleanup easier. Also, pots and pans with two or metals will keep from overheating.

Different metals have different heating rates and distribute heat differently. One reason of lining kitchenware with different metals is to resist scratching, corrosion etc. and the other reason is to regulate the heat distribution so that the food that is being cooked gets cooked evenly but copper is not used since it reacts to acidity and can form malachite (poisonous)

The bottoms of stainless steel utensils usually lined up with another type of metal like copper because thin layer of stainless steel may effect heat suddenly and cooking items may be go in bad condition. By using these copper bottom vessels we can cook food safely. It also helps to cook food on time.
