This may simply been an effect of very dry skin. Consider coating them with moisturizer and/or Vaseline for a few weeks. If there is no change, see your doctor.

Usually, peeling means that your child may be allergic to the sun and this is the reaction this is causing to his /skin. Pay attention to the weather conditions and note the changes in skin. Another reason may be climate such as cold weather or just dry skin. See a doctor to be sure.

Kids grow a lot and the skin has to keep up. This can cause the skin on their extremities to peel. A brisk rub in the bath will help things get moving. Be sure not to pick at the skin or you may cause more damage to the underlying tissue.

Most likely your child is dehydrated. When you experience dehydration, your skin can dry out causing it to peel. Also, the type of soap you use can cause this.
