There are several underwater hotels located in various exotic locations throughout the world. The Poseidon Undersea Resort in Fiji, for example is very beautiful and upscale. If you're looking for something a little closer to home, there is one located in Key Largo, Florida.

One of the best is the Jules Verne undewater hotel in Key Largo, Florida. Note however you have to be a certified diver to register there.
