Members of the pepper family, whether it be habanero or poblano, sweet bell or banana, all begin as green peppers. Green peppers are unripe. As the pepper ripens, it will change colour. First, the pepper would go from an unripe green to a ripened yellow. If left on the plant, it would change further to a red colour.

Banana peppers that are ripe for picking can be either completely yellow in color or a mix of red and yellow. In addition, they will feel firm, but not too firm.

You can easily tell if you know the type of pepper. Peppers are similar to tomatoes in the way that the change colors as they grow. So the pepper will turn from green to what ever the finally color. Once it's changed and is heavy with seeds it's ripe.
