Hard woods will require approximately 6 weeks, soft woods may be carved anytime, though splintering and moisture may make it difficult to carve.

Drying wood to be properly carved can take years! Depending on when the wood was chopped, how it was stored, and what kind of wood it is can all alter the dry time.

That depends largely on the type of wood you're using and how you are drying it. Hardwoods like oak take a good bit longer than softer woods like pine do. But about two weeks in a warm, dry spot is usually a good bet.
