The figs must be completely ripened. Wash and dry them and then cut them in half and lay them in a dry spot skin side down. You can also put them in the over to dry at around 120 degrees for about 8 to 12 hours.

Gather from the ground for peak ripeness, wash, then cut in half. Place on a drying surface (board, plate, rack) outside for warm dry, breeze, covered with propped cheese cloth (toothpicks) to keep bugs away. Bag and freeze 4 hours to pasteurize. Or an oven at 120ยบ for 8-12 hours.

The best way to dry figs is to keep them in the sun for a few days. Just place them on a rack and leave them alone. Be sure to take them inside at night and when your sprinklers go on. The figs are ready when they look leathery on the outside.
