Once the flowers are withered, cut the longer branches and the flowers. This can be done in late summer or early autumn.

You can trim your lavender in the early spring before the new growth starts. Trim yearly in round ball forms for a look less wild looking in the summer.

I would try to trim away the old growth. It will look old, brittle and very woody. You do not want to trim the good, green and healthy folliage. I would trim toward the end of the season before it gets real cold.
