You can trim your lavender in the early spring before the new growth starts. Trim yearly in round ball forms for a look less wild looking in the summer.

I would try to trim away the old growth. It will look old, brittle and very woody. You do not want to trim the good, green and healthy folliage. I would trim toward the end of the season before it gets real cold.
