What should I know about harvesting yucca plant seeds?

I harvest then in the fall. I have put then in the freezer and planted them in the spring. There are many seeds you can freeze, according to a seed specialist. I have been doing this for years, after the flowers go to see. Saves lots of money.

These plants are native to semi arid areas, they can also be grown indoors, and yeah Plant the seeds in well-drained potting soil at a depth of one seed length.

You will need to wait untill late fall. When the leaves on the plant get brown and crumbly it is time to pick them. You will find some seeds with holes. These are normal due to the yucca moth which the plant needs to survive.
