Something using cream cheese or yogurt would be good to serve with something hot like cherry peppers, as the dairy soothes the heat of the hot peppers (one reason why hot Indian food often uses cooling yogurt dishes with the hot ones). Perhaps a nice dip with a yogurt or cream chees base to cool the palate after the peppers.

Continuing the Italian theme, a sauce can be made with roasted red peppers, fresh basil, garlic, a dash of lemon juice, and enough olive oil to make it creamy. Run it all through the food processor, toss with the pasta of your choice, and you have an amazing meal. A sweet red wine goes well with this meal.

You'll want to serve something mild and creamy, like a cream cheese or sour cream based recipe. This will help offset the spiciness of the peppers as well as the saltiness of the prosciutto.

A nice cheese, preferably a mancego or other strong Spanish cheese would go well. A sweeter Chianti or Amontillado would go well if these are an appetizer, or some long grained rice cooked with a meat stock could go well underneath. To brighten the plate, obtain some arugula or rocket.
