Wear gloves. Select fresh crisp peppers. Make sure jars are sterilized and you will need a pressure canner. Find the method you wish to use in cookbook or internet.
I wouldn't; Clean the peppers in cold water, wipe dry. Remove seeds, slice in half lengthwise. Wrap each half in Saran and place in Ziploc bag, place in freezer.
I prefer to blanch and freeze my peppers. Boil them in water and then dip them in cold water to remove the skin. Then use a food saver to seal them in a bag and freeze them.
