Soak 1/2 pound red kidney beans overnight. Put in pot with 1 medium onion sliced, 1/2 green bell pepper, and enough water to boil until beans are tender. Add 1 cup coconut milk, 1/4 tsp thyme, 1-1/2 tsp salt, 1/2 tsp black pepper. Add 2 cups rice. Cook till tender.
