An older person needs all the nutrition that a younger person needs. Out of the ordinary stuff though would be fibre to keep them regular and to keep them well hydrated. Of course fruits and veges.

I would say take it easy on the major carbohydrates, such as pastas, potatoes and beans. THese items are harder to digest.OLder people exercise less, and have a hard time burning off all the carbs. This sugar leads to other ailments. ALso take it easy on carbo and sugared deserts.

She needs enough fresh fruits and vegetables. They are especially important for elder people. They are both watery and very nutritious.
