Prose is formatted (usually) into paragraphs, where sentences follow one another. Poetry is formatted into stanzas, or groups of "lines"--which may be words, phrases, or sentences. Prose follows capitalization and punctuation conventions, whereas poetry may not. The language of prose tends to be more straightforward, while poetry often uses figurative language such as metaphors.
