Use a glass of beer, tea spoon of mustard, tea spoon of honey and one lemon. Steak should be in that for an hour or two, after than it is ready for grillig.

My husband uses Monterey Steak Seasoning first. He butters the pan, sears the meat at a higher heat, then covers the meat and slow cooks. Tough pieces are fork tender.

You are going to need a meat tenderizer. Put your seasonings on the stake and then hit it a few times with your tenderizer. It looks like a hammer.

You can find commercial tenderizers such as Adolph's on the spice shelf but for a more natural way try marinating in anything with an acid or wine base. A combination of red wine or red vinegar, lemon juice, garlic, bay leaf and salt and pepper can do wonders. Mix it up, spread over the meat, cover. Refrigerate one hour.

I've always believed in doing it the simple way. Just get a mallet, metal would be best, and beat te daylights out of it.
