What is the best way to go about cooking beef brains?

Soak the brains in cold water for 60 minutes; pull off any skin and membranes. Boil in salted water for ten minutes, then set in ice water until again firm. Cut them into small pieces and layerer in a buttered baking dish with bits of ham, butter and seasoning. Cover with stock. Bake at 400 degrees F until browned.

Beef brain is very hard to get in most areas but you can special-order it. I make the best tacos by using it instead of ground beef. Simmer the brains for 2-3 hours in water mixed with a packet of taco seasoning. When very tender, chop and use as you would any taco meat. Yummy.

You soak the brain for 1 hour. This releases the empurities. Then you can fry or bake the brains. The French and Spanish use brains in their dishes.

1. Cut cupful of onion, one green chillies, small ginger, curry leaves & garlics. when frying pan heats, pour 3 tablespoons cooking oil and fry well adding red chilly powder, turmeric powder and salt to taste. when reaches golden brown, put cleaned brain mixed with an egg and fry again till cooked well. Finally Spread pepper on top and serve.
