Funnily enough, the HP 5940 is exactly what I would have recommended. Great design, conserves ink wonderfully, great printing quality, and rarely requires maintenance. I'd say go get one!
An old Dot Matrix printer would be the best printer you could use. You can buy them relatively cheap and it is easy to do repairs on them. The parts aren't hard to come by either
