Pectin is a natural thickener found in most fruits. In it's refined state, it is used to create jams and jellies and as a thickener. Apples are the most common source of fruit pectin. Strawberries, especially the white areas near the leaf are also rich in pectin. Cooking and boiling of the fruit releases the pectin and causes jelling.
