What is Mystery Meat?

I have heard people refer to this, but what do they mean, specifically?

It is a negative way to refer to ground meat products (like sausage or Spam) where the primary ingredient or source of the meat is uncertain or unknown.

It's generally minced meat of different parts on the animal mixed together, generally the lesser quality parts of the animal, to form a patty or something of the like.

Mystery meat is a slang term used to refer to meat that cannot readily be identified. In other words, you can tell that it is some sort of meat but it is impossible to tell from what animal it came. It is a derisive term, and implies low-quality food.

When I worked in a restaurant, we got employee dinner each night and often got what we called "mystery meat". This was just another name for a concoction the chef made for employee dinner made up of cuts he had trimmed off filets of beef, lamb or pork that were on the regular menu.
