What is glycerol ester of wood rosin used for in food?

I've seen this as an additive on food products, and am wondering what it's used for.

It's an emulsifier or stabilizer. It usually keeps oils suspended in water... keeps them mixed so they don;t seperate. Glycerol ester of wood rosin is also known by another name, it is often listed as ester gum or gum of ester. This is the same exact stuff, same exact purpose.

It is a product stabilizer and/or emulsifier. An example of this would be to keep oil suspended in water and well mixed rather than seperating.
