What is "clover honey"?

Honey is different depending upon what nectar the bees gather from to make the honey. Clover honey uses the clover flower as it's primary source, which has a very "fresh" flavor. I find it works well as a spread or cake topping, rather than something to be used in cooking.

Clover honey comes from bees that primarily feed on clover plants. The quality of said honey varies based on the bee's diet, the time of the year, and the process by which the honey is handled. Honey collected in late spring and summer tends to have the strongest flavor.

Honey is made from the nectar of different plants. Clover Honey is made primarily from the nectar of the clover plant. Different kinds of honey will have slightly to dramatically different flavors. If all you have ever had was clover honey, it would taste like Honey, however, set against, say, orange blossom honey the flavors would be different.
