What is a good low cal recipe for potatoes?

I am needing to reduce the amount of calories I intake and love potatoes.

Make 1/2 mashed potatoes and 1/2 cooked cauliflower. Boil potatoes until soft. At the same time boil head of cauliflower until cooked thoroughly. Place in mixer with skim milk, a little margarine and black pepper to taste. Mix until the consistency of mashed potatoes. For even more flavor, add a small amount of parmesan cheese.

You can try a baked potato and use low-cal butter spread and sour cream. Or you can try oven roasting potatoes in olive oil with herbs and spices. Another way is to make a cold potato salad with a simple olive oil dressing. I've seen potatoes grilled, too!

Of course there is the good old standby of the plain baked potato, topped with non-fat yogurt and veggie toppings. Or you could steam some cauliflower and mash that in with your regular mashed potatoes that have had some skim milk and seasonings added.

Cut the potatoes into small chunks. Toss them in a bowl with a teaspoon or two of olive oil, and sprinkle with basil, oregano, garlic powder, and salt. Spread on a cookie sheet and bake at 400 degrees for 20-30 minutes or until browned and tender.
