Place 9 ounces bittersweet chocolate in a medium bowl. Heat 1 cup heavy cream in a small saucepan over medium heat. Bring just to a boil. Watch carefully or it'll boil out of pot. When cream's come to a boil, pour over chopped chocolate. Wisk smooth. Cool slightly before use.

This recipe yields 2 cups. Place 9oz chopped bittersweet chocolate in bowl. Heat 1cup heavy cream to right before boil. Pour over chocolate and whisk until smooth.
