Freeze drying was initally invented by the Native Americans. The same process is still used to this day to preserve and prolong our foods.

But perhaps the most interesting invention of the native tribes is the game of lacrosse which was invented by the Iroquois and Hurons living around the St Lawrence River in what is now New York and Ontario. The six tribes of Iroquois called their version of of the game "baggataway".
