I am pretty sure it is refering to when the deer are in mating season, the male deer will snort to detere other male deers and to attract suitable mates.
If a deer is snorting, that isn't a very good sign. If it is a buck especially. Usually that means it is getting territorial and will attack you. The best thing to do is to back away slowly and let it go on it's way.
