Engineering is a huge field with a number of different disciplines, including mechanical, chemical, electrical, design, industrical and civil engineering, to name a few. An individual who is a "field engineer" would work "in the field," hands on, participating/overseeing/managing a patricular projects, as opposed to working behind the scenes.
