What do you do with aggressive cats?

If it's your dog who approaches the cat then the cat is just annoyed by your dog. It's in the nature of cats to be aggressive in these instances. Have you tried keeping your dog away? If the cat is still aggressive with the dog away try using catnip as a mild calming agent/sedative for your cat.

I would take your cat to a PetSmart or similar store and see if they have some sort of training. They may be able to help your cat.
