What do I need to know about cooking and freezing scallops?

Scallops need to be frozen in a single layer on a sheet pan first and then can be bundled together in a zip top freezer bag. In order to cook scallops, you need to cook them on high heat in a non stick pan and only turn once.

You can freeze fresh scallops but they taste best when prepared fresh and not over cooked! Use light seasoning or maybe even just a touch of butter and fry these delicious taste treats up until they are just cooked through. Take care not to over cook! Do not over cook the scallops!!!! That will make them hard and rubbery. I would bake the scallops with butter salt and pepper. Until slightly firm and white in color. For freezing them: Just don't put them in the freezer where they are very hot. Wait until they are warm to room temp.

Season the scallops with a little salt and pepper. Preheat a skillet and add 2T olive oil. Cook until opaque and just firm to the touch, turning once. Do not over cook. Refrigerate until cool, then place in freezer safe container.

Don't cook them long. Use high heat tho. Seering them basicaly. To freeze, dip raw in saltwater with lemon. Freeze 10-20min. then into a zipbag. Easy

all you need to know about that is that you boil the scallops or pickle them and then just seal them in an airtight container and pop them in the freezer. they should last about 2-4 weeks.
