What can you tell me about Catsear?

I am referring to the plant.

This plant is also called flatweed, cat's ear or a flase dandelion. It's a perennial herb found in lawns and other areas. It's considered an herb, and therefore, edible. The leaves and the roots are what is eaten the most, but even the yellow flower can be used to make wine or jelly.
