What can you eat on low carbohydrate vegan diets?

I am seriously considering a vegan diet.

Tofu is an excellent option for a vegan diet, it is made from soybeans. Also eating a lot of different vegetables like hearts of palm, cucumber, lettuce, broccoli and carrots

There are all types of foods to eat on a low carb vegan diet. Fruits, greens,and most vegetables are low carb. Almonds, pecans and walnuts are low carb protein sources.

Eat as much green vegetables, cooked or raw, as often as you feel hungry. Steam or stir-fry them with boiled water rather than oil. Exercise 20 minutes, then take a shower before each meal. The fat will gradually disappear from your chin and abs. Your true beauty will surely shine!

The important thing is to make sure that you are getting the correct balance of proteins, which will be hard if you also cut out carbohydrates. Beans, particularly soy beans, have good protein levels and are low in simple carbohydrates. Tofu is a convenient way of eating soy.

Vegan diets, if you only eat only whole grains, are by nature low carbohydrate. You then can eat any fruits and vegetables you want. Many high fiber nuts are also allowed. Many root vegetables, like potatos and yams, are high in carbohydrates. Do consult a doctor before attempting such a restricted diet to ensure you get enough nutrients.

By definition, a vegan diet does not include any animal products, so you are limited to vegetables, fruits, legumes, and grains. Because of this you have to be especially careful to plan your diet to get enough iron, calcium, and B vitamins.
