go simple. Simple is always timeless and if it's plain enough you won't have a problem matching lost pieces. If they differ a tiny bit it won't be noticeable. If you like fancy, then see what has been consistently made for 20+ years and try for that. But I suggest simple. Go fancy with the linens.
