What are the differences between varnish and polyurethane?

I can't decide which one to use.

Rather than go into the chemical and industrial difference, I'll just stick with the simple noticeable differences. Polyurethane produces a much smoother, slicker, and shinier finish. Varnish tends to look more natural.

Varnish is a coating substance that provides a hard, transparent finish to surface, use in wooden materials and polyurethanes are polymers, used to make foams and also used as adhesives.
