Invest in an olive oil mister (not the aerosol cans). A light spray of olive oil on the grill surface will help keep your meat from sticking to the surface. Also, you can grill your vegetables right alongside your meats.

For a faster cooking, you let the heat temp to of around 240. For slower cooking you lower the temp. and keep the wood chips at a safe level.

Make sure after every time you use the barbecue to clean the grill with a wire brush scraper to keep it new looking and change the grease tray.

The owner's guide that comes with the grill is a good starting point. Pay attention to wind, which affects cooking time. Try to grill in a sheltered area which isn't windy. BUY the optional spit! Anything that can roasted tastes better roasted on a spit over open fire.

Its best to wipe the grill with olive oil before putting food on the grill, this eliminates sticking. Always clean the grill before using.
