You could joke about the person never being slow down, or about how they have been preparing all along either with examples. Making sure the person knows that you will miss them and you have enjoyed working with them and excited for them as they start a new phase in life.

I think the best jokes come from anecdotes or personal experience you had with the person retiring. If you remember anything funny the person said or did that will bring up good memories people have of him or her that'll be funnier than a stock joke.

The best way to go is to tell amusing stories about the person who is retiring that are related to work, or possibly check out a joke book from the library.
