The trick to neatly frosting cookies is to first pipe a thin outline of the shape using slightly thicker frosting to form a rim around the top of the cookie then 'flood' it with slightly more liquid frosting and fill the outline in.

Some of the secrets of cookie decorating are to use templates, you can make these out of paper and put them on top of the cookie you want to decorate. A template helps by allowing you to fill in the part of the cookie that you want to.

One of the keys to successful cookie decorating is to have the proper tools at hand. Cookie cutters and a steady hand for piping icing are important as well. Having a variety of toppers such as sprinkles and different colours of icing are key as well. Get familiar with flooding techniques and get creative.

Always let your cookies cool completely before decorating! If you tend to feel sloppy, start with small amounts. You can always add more, but it's harder to take any away.

You should always use Royal Icing, because it sets properly. You make this by adding 4 teaspoons of merengue powder to each 4oz of confectioner's sugar you use.
