You can make a spinach salad with hard boiled eggs, mushrooms, feta cheese, pine nuts and craisins. Add a low cal raspberry dressing and serve with garlic bread.
Spinach is a great vegetable to slip into your everyday foods. If you put raw spinach in the food processor or blender and grind it up, you can add it to a whole host of recipes without changing the flavour. Try adding it to spaghetti sauce and omelettes to start.
I would try a spinach dip. Mix 1 box frozen spinach, thawed and drained, 1 cup sour cream, 1/2 cup mayonnaise, 1 packet onion soup mix, and pepper to taste.
Slice 3 cloves of garlic and add to some oil in a pan, brown. Add a bag of fresh spinach and cook it down. Add one cup of chicken stock and one can of white beans, simmer about two minutes. Very easy and fast.
